Slice the onion and bell peppers into thin strips. Cut the shiitake mushrooms into thick or thin slices based on preference.

Start by stir-frying the onion until it releases moisture. Add the shiitake mushrooms and cook until 2/3 done.

Add the bell peppers when the onion and mushrooms are partially cooked. Stir-fry until the peppers are slightly softened but still crunchy.

Add all seasoning ingredients and stir-fry until evenly coated. Sprinkle sesame seeds on top before serving.
