Trim the roots of the pea shoots and cut them in half.

Heat salad oil in a frying pan over medium heat and add the canned mackerel. Break it apart and stir-fry briefly.

Remove the lid and stir-fry for 1–2 minutes until the pea shoots soften. Add curry powder, salt, and pepper, then mix well.
