Separate bok choy stems and leaves. Cut leaves into bite-sized pieces and stems into manageable lengths. Halve the root vertically and slice into thirds radially. Crush garlic and remove the core. Soak chili in water, halve, and remove seeds.

Heat salad oil, garlic, and chili in a pan over low heat until fragrant. Add bok choy stems and stir-fry over medium heat until tender. Add bok choy leaves and seasoning, then stir-fry quickly over medium-high heat.
