- 1 burdock root (150g), sliced thinly
 
Meat
- 🍗 1 chicken thigh (250g), cut into bite-sized pieces
 
Oil
- 1/2 tbsp sesame oil
 
Garnish
- 🧅 Chopped green onion, as needed
 
Seasoning
- 3 tbsp sake
 - 1 tbsp mirin
 - 2 tbsp soy sauce
 - 4g bonito flakes
 - 💧 150ml water
 
步驟
Slice the burdock root thinly at an angle and soak in water to remove bitterness. Drain well. Cut the chicken thigh into bite-sized pieces.
Heat sesame oil in a frying pan over medium heat. Add the chicken and stir-fry until the color changes.
Add the burdock root to the pan and stir-fry. Then add the seasoning ingredients (sake, mirin, soy sauce, bonito flakes, and water). Cover with a lid and simmer over low heat for 10 minutes.
Cook until the liquid is reduced and the ingredients are well-coated. Serve on a plate and garnish with chopped green onion.
