Fish
- 2 processed Pacific saury (220g)
Vegetables
- 1 long green onion
Seasoning
- 🧂 1/2 tsp salt
- 1/2 tbsp all-purpose flour
- 1 tbsp salad oil
- 1/2 tsp sansho pepper
Sauce
- 🍬 1/2 tsp sugar
- 2 tbsp mirin
- 2 tbsp soy sauce
步驟
Fillet the Pacific saury into three pieces, remove the belly bones, and peel the skin. Cut into halves, sprinkle with salt, let sit for 10 minutes, then pat dry and coat with flour.
Cut the green onion into 3cm pieces.
Heat salad oil in a frying pan over medium heat, sauté the green onion briefly, then add the Pacific saury skin-side down. Cook until browned, flip, and cook for another minute.
Add the sauce ingredients (sugar, mirin, soy sauce) to the pan and simmer until thickened. Sprinkle with sansho pepper before serving.
