- 🍬 100g sugar
- 🥛 100g heavy cream
- 🧂 1 pinch salt
Scone Dough
- 120g all-purpose flour
- 80g cake flour
- 6g baking powder
- 🧈 70g unsalted butter
- 🍬 45g sugar
- 🧂 1 pinch salt
- 🌰 20g pecans
- 🥛 80g heavy cream
- 🥚 20g egg
- 20g caramel sauce
步驟
In a saucepan, melt sugar without stirring until it turns brown. Warm heavy cream in the microwave for 30 seconds.
Gradually add the warm cream to the melted sugar while stirring. Be cautious as it may bubble up.
Bring the mixture to a boil, then remove from heat and stir in salt. Let it cool.
Sift all-purpose flour, cake flour, and baking powder into a bowl. Add sugar and salt, then mix.
Add cold butter and cut it into small pieces using a scraper until the size of rice grains.
Rub the butter into the flour mixture with your hands until it resembles coarse crumbs.
Add pecans, heavy cream, egg, and caramel sauce to the mixture and combine well.
Form the dough into a single mass using a scraper, then divide into portions and place on a baking tray.
Bake in a preheated oven at 180°C for 15-20 minutes. Cool on a wire rack.
Top the scones with caramel sauce and butter pieces before serving.
