Pumpkin Pound Cake Ingredients
- 🧈 160g butter
- 🧂 160g sugar
- 🥚 210g eggs
- 130g cake flour
- 100g all-purpose flour
- 6g baking powder
- 1 tsp vanilla extract
- 1/2 cup raisins
Pumpkin Glaze Ingredients
- 🎃 420g pumpkin
- 🧈 20g butter
- 🧂 50g sugar
- 2 tbsp honey
- 1 tbsp corn syrup
- 8g cinnamon powder
步驟
Bring butter and eggs to room temperature for 1 hour.
Peel and dice the pumpkin, then simmer it with butter, sugar, honey, and corn syrup in a small pan.
Add cinnamon powder to the cooked pumpkin and let it cool.
Sift the dry ingredients (flours and baking powder) and rinse the raisins, removing excess water.
Cream butter and sugar together until light and fluffy.
Add eggs one at a time, mixing thoroughly after each addition.
Fold in the sifted dry ingredients gently to avoid overmixing.
Add raisins and cooled pumpkin to the batter, mixing gently.
Line a loaf pan with parchment paper and pour in the batter.
Preheat the oven to 190°C and bake for 30 minutes. Lower to 180°C, cover with foil, and bake for an additional 20 minutes.
Remove the cake from the oven and let it cool completely before slicing.
