- 🥔 2 potatoes
- 🥓 3 strips of bacon
- 🥚 2 eggs
- 🧀 1 slice cheddar cheese
- 🧂 A pinch of salt
- A pinch of pepper
步驟
Peel the potatoes and julienne them using a mandoline or knife.
Soak the julienned potatoes in cold water to remove excess starch.
Dice the bacon into small pieces. If unavailable, substitute with ham, sausage, or smoked duck.
Drain the potatoes using a colander to remove water.
In a bowl, mix the potatoes, bacon, and a pinch of salt.
Heat a pan with oil and place a handful of the potato mixture onto it.
Cook the potatoes in the pan, spreading them evenly.
Create two small holes in the middle of the potato mixture.
Crack the eggs into the holes and place a slice of cheddar cheese on top.
Cover the pan with a lid and cook on high heat for about 1 minute.
Sprinkle pepper on the eggs and serve the dish.
