Batter Ingredients
- 🧀 350g cream cheese
- 🥛 70g heavy cream
- 🥛 120g sour cream
- 🍬 65g sugar
- 🥚 2 eggs
- 🌾 4 tbsp cake flour
Crust Ingredients
- 🍪 135g digestive biscuits
- 🧈 85g butter
步驟
Place digestive biscuits in a plastic bag and crush them finely using a rolling pin. Mix the crushed biscuits with melted butter in a bowl.
Press the biscuit mixture firmly into a parchment-lined pan and freeze it.
Mix softened cream cheese with sour cream until smooth. Add sugar and heavy cream, and mix well.
Gradually add beaten eggs in 2–3 batches, whisking each time.
Sift cake flour into the batter and mix until combined.
Pour the batter into the pan and bake at 170°C for 40 minutes, then at 140°C for 15–20 minutes until golden brown.
