Dry Ingredients
- 36g cake flour
- 5g pumpkin powder
- 2g baking powder
Wet Ingredients
- 🥚 1 egg
- 13g vegetable oil
- 🧂 35g sugar
- 2 tbsp warm water
- 🥛 4-5ml milk
Topping
- Crushed chocolate cookies, as needed
步驟
Separate the egg yolk and egg white into two bowls.
Whip the egg yolk vigorously for 10 seconds, then add 1-2 tbsp of hot water and 10g sugar. Mix for 3 minutes.
Gradually add vegetable oil while whipping the yolk mixture. Mix until it turns pale yellow.
Whip the egg whites for 3-4 minutes, adding 10g sugar in two batches.
Combine the yolk mixture with baking powder, cake flour, 2/3 of the whipped egg whites, milk, and pumpkin powder. Sift and mix well.
Pour the batter into a mini cake mold sprayed with water. Tap the mold lightly to remove air bubbles.
Crush chocolate cookies into small pieces and sprinkle them evenly over the batter.
Poke small holes in the batter with a toothpick to allow hot air to circulate during baking.
Bake in a preheated oven at 170°C for 40 minutes.
