Essential Ingredients
- 🍆 2 eggplants
- 100g ground pork
- 🧅 20cm green onion
- 🧅 1/4 onion
- 1 tbsp cooking wine
- A pinch of black pepper
- 1 tbsp potato starch
- 2 tbsp water
- 1/2 cup water
- 1 tbsp sesame oil
Seasoning Ingredients
- 1 tbsp oyster sauce
- 1 tbsp doubanjiang
- 1 tbsp soy sauce
- 1 tbsp oligosaccharide
- 🧄 1 tbsp minced garlic
- A pinch of black pepper
步驟
Cut the eggplants into bite-sized pieces and roughly chop the onion and green onion.
Season the ground pork with cooking wine and black pepper.
Mix the seasoning ingredients to create the sauce.
Heat oil in a pan and stir-fry the green onion and onion.
Add the ground pork and stir-fry until partially cooked.
Add the eggplant and stir-fry until softened.
Pour in the sauce and stir-fry, then add water.
Mix potato starch with water to create a slurry and add it to the pan.
Turn off the heat and add sesame oil to finish the dish.
Serve the Mapo eggplant over rice in a bowl.
