- 1 pack glutinous rice nurungji
- 2 whole squids
- 6 large shrimps
- 1/2 can bamboo shoots
- 🧅 1/2 onion
- 4 shiitake mushrooms
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 2 heads bok choy
- 1 cup soaked wood ear mushrooms
Aromatic Oil
- 6 tbsp vegetable oil
- 1 stalk green onion
- 🧄 7 cloves garlic
- 1 thumb-sized piece ginger
Soup Sauce
- 2.5 liters water
- 2 tbsp soy sauce
- 1/3 cup rice wine
- 3 tbsp chicken stock
- 7 tbsp oyster sauce
- 2 tbsp cornstarch mixed with water
- 1 tsp black pepper
- 1 tsp sesame oil
步驟
Prepare shiitake mushrooms, onion, bell peppers, and soak wood ear mushrooms in water.
Slice bamboo shoots into decorative shapes and rinse off any residue under running water.
Heat vegetable oil in a wok and sauté green onion, garlic, and ginger to create aromatic oil.
Add onion and shiitake mushrooms to the wok, then pour soy sauce along the edges and stir-fry for a smoky flavor.
Prepare squid by scoring and cutting into bite-sized pieces. Clean shrimp and add both to the wok with rice wine.
Pour water and chicken stock into the wok and bring to a boil.
Add bell peppers, bamboo shoots, and wood ear mushrooms, then season with oyster sauce.
Add bok choy and thicken the soup with cornstarch slurry. Finish with black pepper and sesame oil.
Deep-fry glutinous rice nurungji until crispy and golden brown.
Serve crispy nurungji in a bowl and pour the seafood soup over it for a dramatic presentation.
