Broth Base
- 10cm dried kombu
- 💧 1000cc water
- 50cc sake
- 🧂 1 tsp salt
- 2 tbsp soy sauce

Wipe the kombu gently with a paper towel to remove dirt. Cut it into three pieces using kitchen scissors and place it in a clay pot with water. Let it soak for about 1 hour.

Heat the clay pot over low heat. Once the edges of the pot start to bubble, remove the kombu. Add sake, salt, and soy sauce, then mix and bring to a boil.
