Cut the goya in half lengthwise, remove seeds and pith with a spoon, and slice thinly.

Heat salad oil in a frying pan, add the mackerel can, and stir-fry briefly while breaking it apart. Add the goya and stir-fry over medium-low heat for 2–3 minutes until softened.
