    • 🧅 1/4 onion
    • 1 green chili
    • 1 red chili
    • 🧄 2 cloves garlic

  • Sauce

    • 1 tbsp soy sauce
    • 1.5 tbsp vinegar
    • 0.5 tbsp sesame oil
    • 1.5 tbsp sugar
    • 1.5 tbsp water
    • 0.5 tbsp oyster sauce
    • 0.5 tbsp rice wine
    • 2 dashes black pepper
    • 2 tbsp chili oil
  • Batter

    • 4–5 tbsp cornstarch
    • 🥚 3–5 tbsp egg white
    • 2–3 tbsp water

步驟

Prepare the eggplant by cutting it into bite-sized pieces. Dice onion, scallion, green chili, red chili, and garlic finely.

Coat the eggplant pieces lightly with 1 tbsp of cornstarch.

Mix cornstarch, egg white, and water to create a batter. Adjust cornstarch quantity based on eggplant size.

Dip the eggplant pieces into the batter and fry until crispy.

Heat chili oil in a pan and sauté garlic until fragrant.

Mix all sauce ingredients except sesame oil and prepare the sauce in advance.

Add onion and scallion to the pan, stir briefly, then add green and red chili.

Pour the prepared sauce into the pan and let it simmer until slightly thickened.

Add the fried eggplant to the pan and toss to coat evenly with the sauce.

Finish with a drizzle of sesame oil and serve immediately.
