- Main Ingredients - 🥩 350g sirloin beef
- 🧂 to taste salt
- to taste pepper
- to taste olive oil
- 🍚 3 cups cooked rice
- 3-4 tbsp seasoned vinegar
- 🧅 1/4 onion, sliced
- some paprika, sliced
- some radish sprouts
- some baby leaves
- 🌱 some wasabi
 
- Teriyaki Sauce - 3 parts water or dashi stock
- 2 parts soy sauce
- 1 part mirin
- 🍬 1 part sugar
- 🧅 2 green onions
- 🍎 1 apple
- some ginger
 
- Seasoned Vinegar - 3 tbsp vinegar
- 🍬 2 tbsp sugar
- 🧂 1 tbsp salt
 
步驟
Marinate the beef with salt, pepper, and olive oil for a while.
Prepare the teriyaki sauce by simmering water/dashi, soy sauce, mirin, and sugar until reduced by half.
Slice the onion and soak in cold water to remove its sharpness. Slice the paprika.
Cook the beef to your preferred doneness, ideally searing the surface only.
Slice the cooked beef into appropriate sizes for sushi topping.
Mix the cooked rice with seasoned vinegar.
Shape the rice into small sushi balls and add a bit of wasabi on top.
Place the sliced beef on top of the sushi rice.
Garnish with prepared vegetables and drizzle teriyaki sauce over the sushi.
