Rinse the blanched bean sprouts in cold water to retain their crunchiness, then drain them using a colander.

In a large bowl, combine the bean sprouts and chives. Optionally, add any leftover vegetables like scallions.

Add all the seasoning ingredients (red pepper powder, minced garlic, sugar, vinegar, sesame oil, sesame seeds) and mix thoroughly.
