    • 500g cockles
    • 2 green chilies
    • 1 cup chopped scallions
  • Seasoning Sauce

    • 2 tbsp cockle cooking water
    • 3 tbsp soy sauce
    • 1 tbsp mirin
    • 1 tbsp plum extract
    • 🧄 1/2 tbsp minced garlic
    • Generous amount of sesame seeds
    • Generous amount of sesame oil
    • 2 tbsp red pepper powder
  • Cockle Preparation

    • 🧂 Coarse salt for soaking

Soak cockles in cold water with coarse salt for at least 30 minutes to remove impurities.

Rinse the cockles and boil them in clean water, stirring in one direction until 2/3 of the shells open.

Remove the cockle meat from the shells and save the cooking water for the seasoning sauce.

Prepare the seasoning sauce by mixing cockle water, soy sauce, mirin, plum extract, minced garlic, and sesame seeds.

Chop scallions and green chilies. Use crunchy green chilies or substitute with spicy ones for added heat.

Mix cockle meat, chopped scallions, green chilies, red pepper powder, and seasoning sauce. Add sesame oil generously and gently toss.

Serve 2/3 of the cockle mixture as Kkomak Muchim and reserve the rest for bibimbap.

Mix the remaining cockle mixture with cooked rice, additional seasoning sauce, and sesame oil to make Kkomak Bibimbap.
