    • 1 pack (about 100g) king oyster mushrooms
  • Seasoning

    • 🧂 A pinch of salt
    • 1 tbsp flour
    • 1/2 tbsp salad oil
  • Yuzu Pepper Sauce

    • 2 tbsp sake
    • 2 tbsp mirin
    • 2 tsp yuzu pepper
  • For Saury

    • 1 tsp salad oil

Cut the Pacific saury into cylindrical pieces and season with a pinch of salt.

Lightly coat the saury pieces with flour.

Heat 1/2 tbsp of salad oil in a pan and pan-fry the saury pieces until golden brown on both sides.

In a separate bowl, mix sake, mirin, and yuzu pepper to create the sauce.

Add the sauce to the pan with the saury and simmer for a few minutes until the sauce thickens.

Serve the saury with sautéed king oyster mushrooms on the side.
