Slice the sausage into 5mm thick pieces. Use a cookie cutter or a sauce cap to create flower shapes in the center of the sausage slices.
Heat a pan over low heat and place the sausage slices on it. Fill the flower-shaped holes in the sausage with beaten egg using a teaspoon.
Cook until the bottom side turns golden brown, then flip and cook the other side until done.
