Simmered Pumpkin and Carrot

INGREDIENTS

  • Vegetables

    • 🎃 200g pumpkin, cut into bite-sized pieces
    • 🥕 75g carrot, sliced into 1cm rounds
    • 4 snow peas, trimmed and halved
  • Seasonings

    • 1 tbsp mirin
    • 🧂 1 tsp sugar
    • 1 tbsp soy sauce
    • 1/3 tsp Japanese dashi powder
    • 💧 150ml water

Prepare the pumpkin by removing seeds and cutting into bite-sized pieces. Trim tough skin areas. Slice carrot into 1cm rounds. Trim snow peas, microwave with 1 tbsp water for 30 seconds, cool in cold water, and cut diagonally.

In a pot, combine seasonings (mirin, sugar, soy sauce, dashi powder, and water), pumpkin, and carrot. Bring to a boil over medium heat, then cover and simmer on low heat for 6–7 minutes until vegetables are tender.

Serve the simmered vegetables in a dish and garnish with snow peas.
