- 🧂 2 pinches salt
Wet Ingredients
- 🧈 160g unsalted butter
- 60g yuja marmalade
- 🥚 4 eggs
- 2-3 drops vanilla essence
- 🍋 1 tbsp lemon juice

In a bowl, whisk together eggs, sugar, and salt until combined.
Add vanilla essence, yuja marmalade, and lemon juice to the mixture and stir well.
Sift cake flour and baking powder into the mixture, then add melted butter and fold gently with a spatula.
Transfer the smooth batter into a piping bag and refrigerate for 20-30 minutes.
Brush melted butter onto the madeleine pan.
Pipe the batter into the molds, filling each about 80%.
Bake in a preheated oven at 180°C for 13 minutes.
Transfer baked madeleines to a cooling rack and let them cool completely.
