- 1 packet curry powder
- 💧 500ml water
- 300g soft tofu
- 🥚 2 eggs
- 🥕 1/3 carrot
- 1/3 zucchini
- 2/3 eggplant
- 🥔 1 potato
- 🧅 1/2 onion
- 1 king oyster mushroom
- 🍚 1 bowl cooked rice
- A small amount of green onion
手順
Dice carrot, zucchini, eggplant, potato, onion, and king oyster mushroom into similar-sized pieces.
Mix curry powder with 50–100ml of water to create a paste.
Add diced vegetables and 400–500ml of water to a pot, cover, and boil over medium-high heat for about 10 minutes.
Reduce heat slightly and add the curry paste, stirring to combine with the vegetables.
Beat the eggs and drizzle them evenly into the curry mixture.
Cut soft tofu into bite-sized pieces and add to the curry. Simmer briefly over low heat.
Serve cooked rice in a bowl and top with the curry and tofu mixture.
