Prepare the eggplants by removing the stems and slicing them lengthwise into 4–6 pieces.
Steam the sliced eggplants in a steamer for about 3 minutes until tender.
Let the steamed eggplants cool, then use two forks to shred them into bite-sized pieces. Squeeze out excess water and place them in a bowl.
Add soy sauce, sesame powder, minced garlic, and sesame oil to the bowl with the eggplants.
Mix the eggplants and seasoning thoroughly until well combined.
