Add 280g of strong flour into a bowl and create three wells. Place 1/2 tsp salt, 1 tsp sugar, and 1 tsp dry yeast into each well, ensuring they don't touch each other. Mix the ingredients with the flour thoroughly.
Pour 160ml of room-temperature water (around 35°C) into the bowl and knead until the dough comes together. Add 1 tbsp olive oil and knead for 10-15 minutes.
Shape the dough into a ball, coat it with olive oil, and cover the bowl with plastic wrap or a towel. Let it rise for 1 hour for the first fermentation.
After the first fermentation, punch down the dough to release gas, reshape it into a ball, cover again, and let it rest for 15 minutes for the second fermentation.
