Mushrooms
- 🍄 7-8 dried shiitake mushrooms
- 🍄 200g oyster mushrooms
- 🍄 1 pack enoki mushrooms
Vegetables
- 🥬 1/2 bunch spinach
- 🧅 1 large onion
- 🥕 1/2 carrot
Noodles
- 50g glass noodles
Seasonings
- 2 tbsp soy sauce
- 1/2 tbsp sesame oil
- 🧄 1/2 tsp minced garlic
- 1 tsp plum extract
- A pinch of sesame seeds
- 🧂 1/2 tsp salt
- 1 tbsp sugar
手順
Slice the onion and carrot into thin strips.
Heat oil in a pan and sauté the onion with a pinch of salt.
Sauté the carrot in the same pan with a pinch of salt.
Prepare the mushrooms: slice shiitake, tear oyster mushrooms, and trim enoki mushrooms.
Blanch oyster mushrooms in boiling water, squeeze out excess moisture, and set aside.
Mix soy sauce, sesame oil, garlic, plum extract, and sesame seeds. Marinate shiitake and blanched oyster mushrooms.
Blanch spinach in the same water, then season with salt, soy sauce, sesame oil, and sesame seeds.
Stir-fry the marinated mushrooms in a hot pan for about 1 minute.
Boil glass noodles for 7-8 minutes, then stir-fry in a pan.
Season noodles with soy sauce, sesame oil, and sugar while stir-frying.
Combine all sautéed vegetables, mushrooms, and noodles in the pan.
Serve hot, optionally stir-frying portions with additional soy sauce, sugar, sesame oil, and sesame seeds.
