- 600g pork shoulder
Seasoning
- 🧂 1 tbsp salt
- 1/4 tbsp MSG
- 1/2 tbsp doenjang
Sauce
- 🧅 1 stalk green onion
- 1 chili pepper
- 🧄 1 tbsp minced garlic
- 1 tbsp chili powder
- 🍬 1 tbsp sugar
- 3 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp sesame oil
- 1/2 tbsp sesame seeds
手順
Prepare pork shoulder by removing excess blood with paper towels.
Boil water in a pot and add salt, MSG, and doenjang.
Add pork to boiling water and cook for 13 minutes. Skim off impurities during cooking.
Turn off the heat and let the pork rest in the pot with the lid on for 1 hour.
Remove the pork and pat dry with paper towels. Wrap tightly in plastic wrap and refrigerate for 4 hours to 1 day.
Finely chop green onion and chili pepper for the sauce.
Mix chopped green onion, chili pepper, garlic, chili powder, sugar, soy sauce, vinegar, sesame oil, and sesame seeds in a bowl.
Slice the chilled pork thinly and arrange on a plate.
Serve the pork with the prepared sauce.
