Chicken Preparation
- 🍗 1 whole chicken
- 🧂 1 tsp salt
- 1 tsp pepper
- 2 tbsp mirin
Batter
- 2 cups frying flour
- 1 cup cold beer
- 🧊 5 ice cubes
Sauce
- 4 tbsp dark soy sauce
- 3 tbsp soy sauce
- 1 tbsp mirin
- 🍬 1/2 cup sugar
- 3 tbsp corn syrup
- 5 dried chilies
- 💧 1 cup water

- 🧄 10 cloves garlic

Prepare the sauce by combining dark soy sauce, soy sauce, mirin, sugar, corn syrup, dried chilies, and water. Stir until sugar dissolves.
Season the cleaned chicken with mirin, salt, and pepper. Mix well.
Place the chicken in a bag with 1/2 cup frying flour. Shake to coat evenly.
Prepare the batter by mixing cold beer, ice cubes, and 2 cups frying flour. Stir until smooth.
Dip the seasoned chicken pieces into the batter, ensuring they are fully coated.
Heat oil to 180°C (356°F) and fry the chicken for 3–4 minutes. Fry in small batches.
Double-fry the chicken for extra crispiness. Fry for another 2–3 minutes.
Cook the prepared sauce in a pan over medium heat until it simmers. Add the fried chicken and coat evenly.
Slice garlic into thin pieces and bake or air-fry at 160°C (320°F) for 13 minutes until crispy.
Garnish the chicken with crispy garlic slices and serve.
