INGREDIENTES

- 1 large spring cabbage
- 1 red chili
- 🧅 Some green onion
- 🧂 A pinch of salt
Seasonings
- 1.5 tbsp soybean paste
- 1.5 tbsp chili powder
- 1 tbsp plum extract
- 2 tbsp perilla oil
- 0.5 tbsp soy sauce
- 🧄 2/3 tbsp minced garlic
- 🌰 A pinch of sesame seeds
PASOS
Separate the leaves of the spring cabbage, soak them in vinegar water for 10 minutes, and rinse thoroughly under running water.
Prepare green onion and red chili. You can skip the chili if desired.
Boil water and add half a tablespoon of salt.
Blanch the spring cabbage starting with the thicker stems for a few seconds.
Add the leaves and blanch for 30 seconds. Adjust the time for desired texture.
Rinse the blanched cabbage in cold water 2-3 times.
Squeeze out excess water from the cabbage.
Cut the cabbage into bite-sized pieces.
Slice the green onion and red chili finely.
Prepare the seasoning sauce according to the recipe. Add sesame seeds last.
Combine the cabbage, green onion, chili, and seasoning sauce. Mix well.
Taste and adjust with more soybean paste or soy sauce if needed. Sprinkle sesame seeds on top.
