- 🐟 200g sashimi-grade salmon
- 🧅 1/2 onion, thinly sliced
- 🥒 1/3 cucumber, julienned
- 🧅 1 green onion, finely chopped
- 3cm piece of daikon, grated
- 1/4 tsp chili powder
Ponzu Sauce Ingredients
- 🧂 3.5 tsp soy sauce
- 2.5 tsp dashi stock
- 4.5 tsp vinegar
- 🍋 1 tsp lemon juice
- 1 tsp mirin
PASOS
Julienne the cucumber and thinly slice the onion.
Grate the daikon and rinse under water to remove its strong smell. Squeeze out excess water and mix with chili powder.
Prepare the ponzu sauce by mixing soy sauce, dashi, vinegar, lemon juice, and mirin.
Season the salmon lightly with salt and pepper, then refrigerate for 20 minutes.
Heat a pan with olive oil and sear the salmon for 10–20 seconds on each side, ensuring the surface is lightly cooked.
Slice the seared salmon carefully using a sharp knife.
Arrange the salmon slices in a circular pattern on a plate.
Mix the grated daikon with ponzu sauce and drizzle over the salmon.
Garnish with julienned cucumber, sliced onion, and chopped green onion.
