INGREDIENTES
Dough
- 400g strong flour
- 6g dry yeast
- 🧂 9g salt
- 💧 330g warm water
- 30g olive oil
- 1 handful black olives
- 🧅 1 handful onion flakes
Topping
- 4 sprigs rosemary
- 1 handful black olives
- 🧀 2 tbsp parmesan cheese
- 🧂 Pinch of salt
- Drizzle of olive oil
PASOS
Mix warm water and dry yeast in a bowl, then add salt and flour. Knead the dough for 8–10 minutes using a mixer.
Gradually add the reserved water and olive oil while kneading on low speed. Once absorbed, knead on medium speed for 5 minutes.
Transfer the dough to an oiled bowl, fold in black olives and onion flakes, and knead lightly.
Cover the bowl with plastic wrap and let the dough rise for 40–50 minutes.
Spread olive oil on a baking tray, fold the dough again, and let it rise for another 40 minutes.
Press the dough with oiled fingers to shape it. Use a baking pan if no tray is available.
Add black olives, rosemary, parmesan cheese, and sprinkle salt on top. Let it rise for 30 minutes.
Bake in a preheated oven at 185°C for 20 minutes.
