INGREDIENTES
Main Ingredients
- 170g pork belly
- 🧈 300g tofu
- 🥔 80g potatoes
- 100g radish
- 🧅 1/2 onion
- 80g zucchini
- 1/2 green onion
- 1/2 chili pepper
Seasonings
- 4 cups rice water
- 1.5 tbsp doenjang
- 1/2 tbsp gochujang
- 2 tbsp fish sauce
- 🧄 1 tbsp minced garlic
- 1/2 tbsp chili powder
- 1 tsp sugar
PASOS
Prepare pork belly. Regular pork belly can also be used.
Cut radish into thin slices, dice potatoes and onion, and quarter the zucchini.
Slice green onion lengthwise and dice tofu into 1cm cubes.
Add pork belly to a pot and cook over medium heat until browned.
Add potatoes and radish to the pot and stir to coat with pork fat.
Cover the pot and cook for 3 minutes over medium heat.
Add 4 cups of rice water and all seasonings to the pot. Bring to a boil.
Once boiling, add onion and zucchini. Cook until the stew boils again.
Add green onion and chili pepper, then stir.
Add diced tofu and simmer for 5 more minutes.
Transfer to a serving bowl or earthenware pot and reheat until bubbling.
