- 🥚 3 eggs
- 🧅 1 small onion, chopped
- 1/2 bell pepper, diced
- 🍖 50g ham, diced
- 🍄 3 button mushrooms, sliced
- 🧀 1/2 cup shredded pizza cheese
- 🍅 2 tbsp tomato sauce
PASOS
Prepare all ingredients. If you don't have tomato sauce, ketchup can be used as a substitute.
Chop all the pizza toppings (onion, bell pepper, ham, mushrooms) into small pieces.
Beat 3 eggs in a bowl. No need to add salt as the ham and cheese provide enough seasoning.
Heat a small pan over medium heat with a bit of cooking oil. Sauté the chopped onion and sprinkle a little black pepper.
Add the diced ham to the pan and stir-fry briefly. Then add the bell pepper and corn (if using) and sauté lightly.
Add the sliced mushrooms and stir-fry until softened.
Pour the beaten eggs evenly over the sautéed ingredients in the pan.
Reduce the heat to low and let the eggs cook slowly. Spread the ingredients gently if they clump together.
Spread tomato sauce over the partially cooked egg mixture.
Optionally, add spinach leaves on top for extra nutrition.
Sprinkle shredded cheese evenly over the top.
Cover the pan with a lid and cook on low heat until the cheese melts.
