- 🧂 40g sugar
- 🧂 Pinch of salt
- 50g condensed milk
- 1/2 tsp vanilla extract
- 55g cake flour
- 25g almond flour
- 3g baking powder
- 🧈 75g melted butter
- 🍋 5g lemon juice
PASOS
Melt the butter completely using a microwave and let it cool slightly.
In a bowl, whisk eggs, sugar, and salt together until well combined.
Add condensed milk and vanilla extract to the mixture and stir well.
Sift cake flour, baking powder, and almond flour into the mixture and combine.
Add melted butter and lemon juice to the batter and mix until smooth.
Refrigerate the batter for at least 1 hour to allow it to rest.
Transfer the batter into a piping bag after chilling.
Prepare the molds by brushing with room temperature butter and dusting with flour. Shake off excess flour.
Fill the molds 80% full with the batter. Bake at 210°C for 5 minutes, then reduce to 180°C and bake for another 9 minutes.
Cool the madeleines on a wire rack before serving.
