Peel and thinly slice burdock, then soak in cold water to prevent discoloration. Chop the onion finely.

Grind chicken breast using a knife or food processor.

Heat a pan and melt butter. Sauté onion and burdock until golden brown.

In a bowl, mix minced chicken, sautéed burdock and onion, cooking wine, soy sauce, egg, sugar, and breadcrumbs until sticky.

Divide the mixture into 4 portions and shape into round, flat patties. Apply oil to your hands to prevent sticking.

Heat a pan with a little oil and cook the patties until golden on both sides. Add a bit of water, cover, and steam over low heat for 5 minutes.

In the same pan, combine sauce ingredients and simmer briefly. Adjust sweetness by substituting corn syrup with sugar if desired.
