    • 1 1/4 cups lentils, rinsed
  • Liquids

    • 2-3 cups chicken stock
    • 💧 11 cups water
  • Pasta

    • 2/3 cup macaroni
  • Cheese

    • 🧀 1 cup grated Parmesan cheese
  • Oil

    • 2 tbsp olive oil

Heat olive oil in a pot and sauté chopped onion, carrot, and celery until softened.

Add minced garlic, salt, and pepper. Cook for 5-8 minutes until vegetables are tender.

Pour in canned tomatoes with their juice and cook for 8 minutes until tomatoes break down.

Add rinsed lentils, chicken stock, and water. Stir in thyme or bay leaves.

Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.

Add macaroni and cook for 8 minutes, stirring occasionally to prevent sticking.
