- 🐖 150g thinly sliced pork belly
 
Vegetables
- 200g kimchi
 - 🧈 150g silken tofu
 - 🧅 80g green onion, sliced
 - 🍄 50g enoki mushrooms
 - 🌱 30g chives, chopped
 
Seasoning
- 🍶 1 tbsp sake
 - 🧂 1/4 tsp salt
 - 🧄 1/2 tsp grated garlic
 - 1/2 tbsp sesame oil
 
Soup Base
- 🍶 1 tbsp sake
 - 2 tbsp gochujang
 - 🍬 1/2 tbsp sugar
 - 🧂 1/2 tbsp soy sauce
 - 1/2 tsp beef stock powder
 - 💧 600ml water
 
步骤
Massage pork belly with sake, salt, garlic, and sesame oil in a plastic bag.
Slice green onion, trim enoki mushrooms, chop chives, and cut tofu into bite-sized pieces.
Heat pork belly in a pot over medium heat until lightly browned, then remove.
Add soup base ingredients to the pot, mix, and bring to a boil. Add green onion, enoki mushrooms, tofu, and half of the kimchi. Cover and simmer for 3 minutes.
Add pork belly, chives, and remaining kimchi. Cover and simmer for another 3 minutes until fully cooked.
