Main Ingredients
- 600g beef shank
- 💧 1.5L water
- 6 leaves napa cabbage
- 1 handful chives
For Boiling Beef
- 1 stalk green onion
- 🧄 1 handful garlic
- 1 piece radish
- 6 sheets kombu
For Sauce
- 2 tbsp soy sauce
- 💧 2 tbsp water
- 1 tbsp vinegar
- 1/2 tbsp sugar
- 1 tsp mustard
- 🧄 1/4 tbsp garlic
步骤
Soak the beef shank in cold water for 30 minutes to remove blood.
Prepare the vegetables for boiling the beef.
Add 1.5L water, vegetables, and beef into a pot. Bring to a boil, then reduce to medium heat and simmer for at least 60 minutes.
Remove any floating fat from the broth as it simmers.
Prepare the sauce by mixing soy sauce, water, vinegar, sugar, garlic, and mustard.
Wash and cut napa cabbage into large pieces and chives into 10cm lengths.
Layer napa cabbage in a shallow pot, add 2-3 ladles of beef broth, and bring to a boil.
Slice the boiled beef shank thinly after it has cooled slightly.
Layer chives over the cooked napa cabbage, then arrange sliced beef shank on top.
Serve the dish with the prepared sauce and enjoy with the napa cabbage and chives.
