Cut the potatoes into bite-sized pieces, soak them in water, and drain. Place the potatoes in a microwave-safe container, cover loosely with plastic wrap, and heat in a 600W microwave for 5 minutes.
Cut the chicken thigh into bite-sized pieces.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and cook until browned. Flip and cook until fully cooked.
Add the potatoes to the pan and stir-fry over medium heat for 1–2 minutes until browned. Add the seasoning mixture and cook over medium heat until the sauce thickens and coats the ingredients.
