- 1 tbsp rice wine
- 🧂 1/2 tsp fine salt
- 1/2 tsp soy sauce

Whisk the eggs thoroughly until smooth, then add shiitake kelp broth. Mix in rice wine, fine salt, and soy sauce evenly.
Strain the egg mixture through a fine sieve and skim off any foam on the surface with a spoon.
Cover the surface with foil and steam in a preheated steamer for about 15 minutes. If adding garnish, steam for 15 minutes, add garnish, cover again, and steam for an additional 5–6 minutes.
