Fish
- 🐟 2 fillets fresh salmon
 
Citrus
- 🍋 1/2 yuzu, juiced and zested
 
Seasoning
- 🧂 Pinch of salt and pepper

- Enough flour for coating

- 1 tbsp salad oil

Sauce
- 1 tbsp soy sauce

Zest the yuzu peel and squeeze the juice, reserving 1 tbsp of juice.
Season the salmon fillets with salt and pepper, place them in a tray, and mix with the yuzu juice. Let marinate for 5 minutes. Coat with flour.
Heat salad oil in a frying pan over medium heat. Add the salmon and cook until browned on one side, then flip and cook through.
Wipe excess oil with a paper towel, reduce heat to low, and add soy sauce and butter. Coat the salmon evenly. Serve on a plate and sprinkle with yuzu zest.
