- Staple - 🍚 2 bowls cooked rice (400g)
 
- Meat - 200g sliced pork belly
 
- Vegetables - 🧅 1 onion, sliced
- 🥕 1/2 carrot, sliced
- 1/2 piece minced ginger
- 🧄 1/2 piece minced garlic
 
- Seasoning - 🧂 Pinch of salt and pepper
 
- Canned Goods - 🍅 200g canned diced tomatoes
 
- Liquid - 💧 450ml water
 
- Oil - 1 tsp olive oil
 
- Condiments - 80g curry roux (6 pieces)
 
BƯỚC
Cut pork belly into 4cm pieces and season with salt and pepper.
Slice onion into 1cm pieces, cut carrot into thin slices, and mince ginger and garlic.
Heat olive oil in a pot, add ginger and garlic, and sauté over low heat until fragrant. Add pork and cook until browned.
Add onion and carrot, sauté until onion softens. Add canned tomatoes and water, bring to a boil, and simmer covered for 8–10 minutes.
Add curry roux, cover, and let it melt off heat. Stir over low heat until thickened.
Serve curry over bowls of rice.
