Base
- 60g crushed digestive biscuits
- 🧈 23g melted butter
Filling
- 200g cream cheese
- 🧂 100g sugar
- 🥚 2 eggs
- 3g vanilla extract
- 67g heavy cream
- 🥛 53g milk
- 🍋 3g lemon juice (optional)
- 36g cornstarch
BƯỚC
Soften the cream cheese until smooth.
Add sugar and mix well.
Add eggs one at a time and mix thoroughly.
Add heavy cream and milk, then mix until combined.
Sift cornstarch into the mixture and mix gently.
Combine crushed digestive biscuits with melted butter, press into the bottom of a lined cake tin.
Pour the cheesecake batter into the prepared base.
Preheat the oven to 160°C. Place the cake tin in a water bath and bake for 65–75 minutes.
After baking, leave the oven door slightly ajar with a towel for 1 hour to cool gradually.
Refrigerate or freeze before serving for a firmer texture.
