Cut the king oyster mushroom into bite-sized pieces. Slice the bok choy into six vertical sections, separating stems and leaves. Mince the garlic.
Cut the boiled octopus into bite-sized pieces.
Heat salad oil and garlic in a frying pan over low heat until fragrant. Add the octopus, king oyster mushroom, and bok choy stems. Stir-fry over high heat.
Once softened, add the seasoning ingredients (sake, chicken stock powder, salt, and pepper) and bok choy leaves. Stir-fry briefly.
