Trim the base of the enoki mushrooms and prepare assorted vegetables from the fridge, preferably colorful ones.
Cut enoki mushrooms into 1cm pieces and finely chop the other vegetables.
Mix 2 tbsp pancake flour, 4 eggs, a pinch of salt, and pepper. Optionally, add chopped ham for extra flavor.
Stir the mixture well until the batter is evenly combined.
Heat a pan with enough oil and spoon the batter onto the pan. Cook on medium-low heat until golden brown on both sides.
