Cabbage Preparation
- 🥬 1 head napa cabbage
- 🧂 1 cup sea salt
- 💧 3 liters water
Seasoning
- 13-15 tbsp medium red pepper flakes
- 3 tbsp fish sauce
- 1 tbsp fermented shrimp
- 🍬 2 tbsp brown sugar
- 1 tbsp plum syrup
- 🧄 15 cloves minced garlic
- 2 tbsp ginger juice
- 🌾 A pinch of sesame seeds
BƯỚC
Cut the napa cabbage lengthwise into strips for a more visually appealing shape.
Place the cabbage in a large bowl and sprinkle 2/3 cup of sea salt evenly over it.
Add 3 liters of water to the bowl and mix gently. Sprinkle the remaining 1/3 cup of sea salt on top.
After 30 minutes, check the cabbage. It should be slightly wilted but still firm.
After 1.5 hours, the cabbage should be fully brined and pliable. Rinse it 3 times in fresh water to remove excess salt.
Blend the garlic into a paste using a hand blender. Adjust the amount if you prefer a milder garlic flavor.
Mix all seasoning ingredients in a bowl until well combined.
Add half of the seasoning to the cabbage and mix thoroughly. Taste and adjust seasoning as needed.
Serve immediately or let it ferment for a day for enhanced flavor.
