  • Fish

    • 2 fillets of sanma
    • 🧂 Pinch of salt and pepper
  • Seasoning

    • 🧄 1 clove garlic, minced
    • 1/2 tbsp all-purpose flour
    • 🧈 10g salted butter
    • 1 tbsp olive oil
  • Tomato Sauce

    • 🍅 6 cherry tomatoes, chopped
    • 1/3 tsp herb salt
    • 🧂 Pinch of salt and pepper
  • Side

    • 🥖 4 slices of baguette

Chop the cherry tomatoes finely and mince the garlic.

Season the sanma fillets with salt and pepper, then cut them in half and coat with flour.

Heat butter in a pan over medium heat, place the sanma skin-side down, cook until golden, flip, and cook for another 3 minutes. Plate the sanma.

In the same pan, heat olive oil and garlic until fragrant, then add the tomato sauce ingredients and sauté until combined.

Pour the tomato sauce over the sanma and serve with baguette slices.
