    • 1 tsp cooking wine

  • Kung Pao Sauce

    • 2/3 tbsp soy sauce
    • A small amount of cooking wine
    • 1.5 tbsp corn syrup
    • 💧 1 tbsp water
    • 1 tsp sesame oil
    • 1.5 tbsp oyster sauce
    • A small amount of hot sauce

Slice green chili, red chili, and chop paprika into small pieces.

Mix the Kung Pao sauce ingredients in a bowl.

Quarter the shiitake mushrooms and remove the stems.

Season the mushrooms with minced garlic, ground pepper, and cooking wine.

Coat the mushrooms with cornstarch or a mix of flour and egg yolk.

Deep-fry the mushrooms until golden and crispy.

Heat chili oil in a pan and stir-fry the chopped chili and paprika.

Add the Kung Pao sauce to the pan and simmer briefly.

Add the fried mushrooms to the pan and toss to coat evenly.
