Vegetables
- 🥒 5 cucumbers
- 1 handful of chives
- 🧅 1 onion
Brine
- 💧 1 liter of water
- 🧂 5 tbsp coarse salt
Seasoning
- 5 tbsp red pepper powder
- 2 tbsp fish sauce
- 2 tbsp plum extract
- 1 tbsp fermented shrimp
- 🧄 1 tbsp minced garlic
ШАГИ
Cut the washed cucumbers into appropriate lengths and quarter them. Soak them in boiling water mixed with coarse salt for 15 minutes. Drain the cucumbers using a sieve.
Place the cucumbers and sliced onions in a bowl and mix them with the prepared seasoning.
Add the chives and gently mix everything together. Adjust the seasoning with fermented shrimp or salt if needed.
Enjoy the cucumber chive kimchi immediately or store it in the fridge for later consumption.
