ИНГРЕДИЕНТЫ

  • Dough

    • 250g strong flour
    • 45g unrefined brown sugar
    • 🧂 1 tsp sea salt
    • 1 tsp instant dry yeast
    • 🥚 1 egg
    • 💧 80cc water
    • 🥛 25cc milk
    • 🧈 35g butter
  • Filling

    • 400g red bean paste
  • Egg Wash

    • 🥚 A small amount of egg wash

Combine all dough ingredients except butter in a mixer and knead until a cohesive dough forms. Add butter and continue kneading until elastic.

Shape the dough into a ball, cover with plastic wrap, and poke 3-4 holes for ventilation. Let rise at room temperature until doubled in size.

Deflate the dough, divide into 10 equal portions, and shape into balls. Cover with a damp cloth and let rest for 15 minutes.

Roll each dough ball into a 10x15cm rectangle. Place 40g of red bean paste at the bottom and roll up, leaving 3cm at the end.

Cut slits into the remaining end and wrap each strip around the dough, forming a flower shape. Seal the ends securely.

Place shaped dough on a baking tray with space between each piece. Cover with a damp cloth and let rise until 80% proofed.

Brush the tops with egg wash for a shiny finish.

Bake in a preheated oven at 190°C for about 12 minutes until golden brown.
